Potato Mushroom Rosemary Pizza
because doubble starch is doubble delight…..we did baby potatoes with our pasta, do you remember? cause really what is better than baby potatoes tossed in your pasta? hmmmm, potatoes on your pizza? my first crush, my first boyfriend, my first lover, was always, the potato….it’s the sweden in me…..i don’t want to hear any no carb non sense…..potatoes are a root vegetable….they are gift of goodness from the earth….it is a non manipulated food……i am afraid of anyhing labeled “non”, “low” or “free”, something straight from the earth, we have been eating for centuries….really there is nothing to fear. And rosemary and potato, that is not fear, that is a feast. That is a love affaire.
Ingredients
- 1 sheet puff pastry, ok you can make yours, but I am going to buy mine
- 1/2 cup of ricotta, goat cheese or any soft cheese for that matter
- 1/4 cup of creme fraiche or sour cream
- 1 egg
- Gruyere cheese, sliced
- 1 potato sliced thin, and cooked in salted water for 1 to 2 minutes
- Mushrooms, cooked in high heat for a few minutes, seasoned with salt and pepper
- Arugula, tossed with salt, olive oil and lemon juice
Instructions
- Defrost your puff pastry and spread on a sheet pan, It is always a good idea to use a silpat liner or parchment paper underneat it.
- In a food processor, mix the cheese with the creme fraiche and the egg. You want it to become thin enough to be spreadable. If you are using goat cheese you may need extra creme fraiche, or you are going to struggle to spread it. Then spread the mixture over the puff pastry and then cover the entire puff pastry sheet with sliced gruyere cheese. Ok you can use any cheese you find in the fridge.Place your potato slices decoratively over the top and sprinkle with rosemary and salt.
- Bake the pizza in a 425 degree oven and cook until almost done.

- Yes, almost done. And really I don’t know how hot your oven is…..how cold your puff pastry was when put into the oven. Lift the pizza a little and look on the bottom of the pizza, it should be nice and brown on the bottom. It is going to take around 45 minutes, but you are going to have to check it!!!
- When it is almost done, add the mushrooms and sprinkle some parmesan cheese all over and return to the oven 5 more minutes. Once done, that is right, once done, you shall take it out and garnish with the seasoned arugula.
- NOTES: ok, you can add the potato slices raw, and play a little potato roulette….maybe your potato is cooked at the same time the pizza is done. Maybe not. Us cautious swedes, prefer to precook the potato in water for 1 to 2 minutes to ensure the potato is cooked. Also, you could put the mushroom on the pizza when you add the potato, but the mushrooms may burn. So it is all up to you, and what odds you are willing to bet on your dinner.
