WATERMELON CUCUMBER salad with feta dressing
And so our GM aka Showtime Dave, but currently doing mostly hospital deliveries, is now Chauffeur Dave. No angry or happy customers to deal with, no staff to manage, no invoices to scan, no schedules to make. Any way back in simpler times, he was not only the GM, he also created the all agave based cocktail program.
During this pandemic, we were selling, or at least trying to sell to go orders. We added cocktails to our to go offerings. And so Chauffeur Dave wanted to make a batch of our most popular cocktail the “watermelon”. He intended to order 4 single watermelons, but in our normal ordering “4” means 4 cases…….and so we arrived one morning to find a stack of watermelons waiting by our back door.
Awesome……so watermelon to the front line workers it was.
We also had cucumbers and lots and lots of feta cheese crumbles. Came out pretty, pretty good.
WATERMELON CUCUMBER salad with feta dressing
Ingredients
- Cubed watermelons
- Sliced cucumbers
Feta cheese dressing:
- ¾ cup sour cream or creme fraiche
- 3 tablespoons mayonnaise
- 3 tablespoons fresh lemon juice
- 1 clove garlic, grated
- 3 tablespoons chopped fresh herbs (any) although my favorites are dill, parsley, cilantro
- 2 - 3 ounces crumbled feta cheese
- ½ teaspoon Worcestershire sauce (optional)
Instructions
- Whisk together all the dressing ingredients and pour over the water melon salad. REFRESHING.
