SWEDISH CHEESE CAKE
Swedish cheesecake is similar to Italian-style ricotta cheesecake, except that the Swedish version does not have a crust and does not include vanilla or lemon, and barely has any sugar in it.
If this sounds bland, think again: this is the perfect sweet and mellow treat to serve with fresh berries. Spoon ripe cloudberries, currants, and blueberries over the cake, then top it all with a generous serving of sweetened whipped cream. Finish it with a dusting of powdered sugar – a simply glorious dessert.
SWEDISH CHEESE CAKE
Servings: 7 people
Ingredients
- 2 eggs
- 4 tablespoons all purpose flour
- 1 1/2 cups half and half
- 1/2 cups blanched almonds, chopped fine
- 1 container whole-milk ricotta or cottage cheese (15 ounces)
- 2 tablespoons sugar
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl whisk eggs, flour, and half-and-half.
- Stir in almonds, cheese, and sugar. Whisk until well combined.
- Pour into a greased, 1 ΒΌ-quart bread loaf pan and bake for 1 hour.
- Serve chilled with fresh berries and whipped cream.
