DREAM BEANS with OLIVES

I meant to say green beans….but we all know they are mostly green, and even when we talk about purple or white green beans, we also include “green” in description, as in purple green beans or white green beans, to indicate it is a string bean and not a legume or dried bean, so instead of all that, dream bean it is. Phew. 

Serves 4 

1 bunch dream beans – as in any color string beans, white, green, purple 

1/2 cup creme fraiche

1 tablespoon olive oil

1 tablespoon lemon juice

1 clove garlic, grated

Salt to taste 

1/2 cup olives any color, pitted and chopped 

1/2 cup fresh dill or herb of choice, chopped 

Instructions
In a large or medium pot of salted water, boil the green beans for one minute. Yes one minute. They need to be nice and crispy. If they need longer cooking than that, feed it to the horses or the goats, or the pig. Skip ice bath because they just absorb too much water which does not help the flavor. Just spread them out on a sheet pan to dry off when still hot. 
 
In a small bowl combine creme fraiche, olive oil, lemon juice, garli and salt to taste and drizzle over the beans, garnish with olives and herbs.
