SUMMER SALAD with black bean lime vinaigrette

Summer time and the living is easy,

salad meals make the cooking super breezy,

a black bean dressing, is a delicious blessing. 

serves 4

Ingredients

4 cup Baby mixed lettuces, or greens of choice 

2 cups cherry tomatoes, halved

4 ears corn, cooked for 1* minute, then cut the corn of the cob

2 avocados, diced

1/2 cup shaved parmesan cheese

1 cup black bean lime dressing (recipe below) 

*Please do not cook your corn for more than 1 minute.

If you buy fresh corn, it should be so good you can eat it raw. Good corn just needs a quick cook.

Place all ingredients in a bowl or on a platter, and pour the dressing over it. 

black bean lime vinaigrette with pickled chilies 

1 cup black beans, cooked, canned or purchased 

1 garlic clove, grated

juice from 4 limes, about 1/4 cup 

1/4 cup olive oil

1/4 cup chopped fresh herbs, dill, basil, parsley 

1 tablespoon red onion, or shallot, diced

3 tablespoons pickled red chilis or sliced jalopenos, optional 

salt to taste

In a small combine dressing ingredients, season to taste with salt.

The beans can marinate in the dressing over night. Pour over the salad ingredients.
