PEAR CRANBERRY SALAD

There is the saying, something old, something new, something borrowed something blue……which may be true, and the perfect meal for me something spicy, something sweet, something creamy and a healthy treat. 

And pear cranberry salad is the perfect something “sweet” on its on or for the dream smorgasboard buffet 

 
Ingredients
serves 4 
  • 2 Super thin sliced pears
  • 1/2 cup walnuts
  • 1/2 cup blue cheese, parmesan cheese, or any cheese of your liking
  • 1/4 cup dried cranberries
  • 4 cups lettuce of your choice, arugla, mixed baby greens, kale, spinach 
  • 1/8 cup red wine vinegar
  • juice from 1/2 good lemon
  • 1 teaspoon chopped shallot
  • 1/8 cup of walnut, hazelnut or olive oil
  • 2 teaspoon of Dijon mustard
  • s+p
Instructions
  1. Arrange Salad ingredients as nice as you can
  2. To make the walnut dressing whisk together red wine vinegar, lemon juice, chopped shallot, walnut oil, dijon mustard, salt and pepper is a small bowl
  3. Pour the dressing over the salad ingredients.
