BACON DATES the CAULIFLOWER

Say what?

You don’t like cauliflower? It is like saying you don’t like arugula, the horror. How do we seduce you? How do we romance and dance you? How do we bait you, catch you, attract you, distract you, lure you, bribe you, captivate you? …..with a weapon as old as time…….. obvi, BACON, will reel you in, bacon will snare you in our net, and then with sweet kisses the DATE will seal your fate, and your love affaire with the cauli- FLOWER is here to stay. 

serves 4 
  • 1 head of cauliflower
  • 2 cups wild arugula
  • 4 medjool dates, pitted chopped fine
  • 4 slices pancetta or bacon, chopped fine
  • juice from 1 lemon
  • I clove of garlic, grated 
  • 1/4 cup olive oil
  • salt to taste 
Instructions
  1. Separate your cauliflower into little florets. Drizzle with oil, and bake in a preheated 400 degree oven until browned and soft. Season with salt and pepper. While the cauliflower is baking, cook the pancetta until crispy. Then add the dates to the cooked pancetta. In a bowl, whisk together the lemon juice, garlic, salt and pepper and a drizzle of olive oil. Toss in the cooked cauliflower, the dates and pancetta and the arugula.
