BEER-becue chicken salad

So it was time to make some beer-becue sauce, cause summer is here and we need beer and bbq, and obvi although our health care heroes are still on the battle field THANK YOU HEROES – we will give them a memorial day beer barbeuce our way. You can use a store bought BBQ sauce for his and just drink the beer, chug chug chug, if you don’t feel like making your own sauce. 

Beer-beceu sauce

1 bottle or can of beer – I used an eithopian cofffee roasty stout beer, but any beer will work 

1 small yellow onion, peeled and diced

2 carrots, peeled and diced

2 cloves garlic

1 tablespoon olive oil

1/4 cup parsley

1/2 cup soy sauce

1/4 cup dark molasses

1.5 cup ketchup

dash of worchister sauce

1/8 cup (or to taste) sriracha or your favorite hot sauce

1 tablespoon balsamic vinegar 

2 cups broth (chicken, beef, vegetale) or water (optional)

salt to taste 

In a medium or large skillet sautee the onion, carrot and garlic, in the oil over medium heat for about 10 – 15 minutes stirring occasionally. We want to slowly brown our vegetables to become slightly caramelized and softenened. Season with salt and pour the beer into the pot. Cook the beer until reduced by half about 10 minutes. We want a gooey, thickened liquid. Allow to cool, transfer to a blender to and puls until combined and return to the pot. 

Add remaining ingredients, except the broth. Cook for ten minutes and taste for seasoning. It will be thick and goey, just the way you like it If you want to use this as a BBQ sauce to coat meats for grilling. We are using ours for a salad, and want it more light like a dressing, so to use for a salad thin it to desired consistency with broth or water.

To finish your salad use any vegetables and greens that you like, corn, green beans, asparagus, tomatoes, kale, spinach, cucumber, red onions, your salad! Then add accoked protein like chicken, tofu, garbanzo beans. We served ours with a brown rice salad, lentils, kale and local peaches, we picked and then sauteed and seasoned with agave, lemon juice, garlic, rosemary and parsley. We also send a yogurt dressing, raw carrot slwa, and home made corn bread.
