COOKIES FROM JOANIE

Baking is so not my thing, I think everyone knows that about me. For this class we brought in a local baking queen, boss, mom, community citizen and she took over the baking session and all I did was eat the goodies and watched.

Ingredients
  • 2 oz butter, unsalted
  • 3 1/2 oz sugar
  • 3 eggs
  • 3 oz espresso, or water, or regular coffee, or i guess water and some coffee extract
  • 12 oz semi sweet chocolate chips
  • 3 1/4 oz all purpose flour (maybe a touch more if too soft) 
  • 3/4 teaspoon baking powder
  • 1 cup almond meal – 3 oz 
Instructions
  1. Cream(which is beat) the butter and sugar, and per our very excellent instruction by JOANIE, we have now learned that there is no such thing as creaming too much.
  2. So cream. Cream it well.
  3. Now add the eggs, one by one, then stir in your espresso (or water or coffee).
  4. Blend your dry ingredients in a bowl (flour, almond meal, baking powder), then add your dry ingredients to your wet ones.
  5. Chill until set.
  6. So go ahead, check your email, do some yoga, hike the canyons, whateva!
  7. Scoop into little balls, that you will roll first into granulated sugar and then into powdered sugar, then you will bake in a 350 degree oven until just done, about 10 – 12 minutes.
