DO NOTHING BAKED POTATOES
The Swede in me, grew up with a love affaire of fingerling potatoes, it was the only ones I knew. I have always said my first love, and my first lover was the potato, a fingerling specifically; funky shapes, small size, full of starch. Other potatoes were foreign, different, and inferior, in my mind, I mean they didn’t grow up in Swedish soil! I now love the russet too, because all potatoes have their own beauty. Just because I never met a russet potato growing up, did not mean I had to fear or loath it, there is no inferiority or supremacy, in the potato world there is no need to classify some potatoes as better than others, each has their way to shine, and makes a delicous meal to dine.
I love my fingerlings and I love my russets and my cryptonite regardless what potato we are talking about is SPICY, because there is nothing i love more than:
something mild + something very spicy; baked potato+ something spicy= you got me at hello
So, our do nothing baked potatoes, goes as follows.
Well, you can wash them. But that is it. Then do NOTHING.
Nope, not gonna wrap them in foil.
Not gonna rub them in oil.
Just gonna open the oven door, to the pre heated 450 degree oven, put them in and walk away.
One hr later, we are going to return, slice them up and spice them up, adding chili butter, or plain butter, sour cream and/or a bottle of salsa on the side. Go head top it off with a mountain of arugula or kale, eating your greens is always encouraged.
Why is this a recipe you ask?
Well it is not, it is simply an instruction that it is ok to do nothing.
You are already doing to0 much, so here it is, permission, and encouragement to do nothing but to open the oven door.
It is also a reminder to not fear the foreign, and the different, just because you only knew one potato growing up, doesn’t mean that is the only potato to love.
