FENNEL CABBAGE CITRUS OLIVE SALAD
We had a ton of oranges, because normally we sell a ton of freshly squeezed orange juice…..well no more, no customers, no juice to squeeze, only boxes of oranges sitting in dry storage…..so it was time to make an orange salad. Luckily for me we also had lots of fennel, tons of cabbage (missing those fish tacos we used the cabbage for) anyway, and there was olives in dry storage, so yeah perfect.
FENNEL CABBAGE CITRUS OLIVE SALAD
Ingredients
- 2 oranges, peeled and cut into wedges
- 1 fennel bulb, sliced very thin
- 2 cups cabbage, sliced thin
- 3 tablespoons olives, any kind, pitted
- 2 tablespoons fresh herbs
- 3 tablespoons olive oil
- 1 clove garlic, grated
- Salt to taste
Instructions
- There will be a lot of orange juice on your cutting board after cutting the oranges, so scoop this up with the cut oranges and place in a bowl, add the olive oil and garlic. Awesome you now have orange dressing so guess what? Not going to add lemon. Yeah, I know, you thought that day would never come when i said no lemon needed, well here it is. Not sure when and if it will ever come again, so take advantage. Lemon is my favorite thing.
- Toss together the rest of the ingredients into the oranges, fennel, cabbage, herbs, and salt.
