GRAIN GOODNESS SALAD with MISO VINAIGRETTE
For today’s drop we are stepping it up…welcome back CHEF BRECK….he is cooking up a storm, with a choice of chicken, steak or tofu in a soy ginger marinade and a grain goodness salad with miso vinaigrette
Grain goodness salad
Serves 4
1 cup farro, cooked according to package directions
1/2 cup sugar snap peas, sliced thin
1/4 cup celery, sliced thin
1/4 cup shredded carrots
1/4 cup green beans, blanced sliced thin
1 cup kale, sliced thin
Combine all the below ingredients and toss with the sticky soy dressing (recipe below)
soy dressing
1/4 cup mirin
3 tablespoons agave or honey (1/8 cup)
1/4 cup soy sauce
Combine all ingredients in a small sauce pan and simmer over low for 20 minutes. Allow to cool and it will be thickish, sticky and yummy
miso vinaigrette
2 tablespoons miso
juice from one lemon, about 2 tablespoons
1 tablespoon rice vinegar
1/8 cup olive or vegetable oil – less oil
1 clove garlic, grated
one pinch of grated ginger (optional)
Combine all ingredients and serve with the grilled chicken, tofu or steak
