GRILL ME SOME CORN POR FAVOR

Hey so yeah nothing better than corn so fresh you can eat it raw. But what about that time you bought the best farmers market corn but forgot you were eating out three days in a row….and now there it is, three days later it is still good, but it’s prime has past. Aging of course is a stage of learning, knowledge and strenght. From caterpillar to butterfly, there is nothing past about aging. Fresh corn salad or grilled a few days old corn, youth and maturity is always in style.

Of course you can use the freshest corn for this as well, but young corn shines best raw or with a quick blanch, this  seasoned and grilled style is great use of corn not past prime, but at prime age

 
Ingredients
  • Compound butter
  • 1/2 stick butter
  • 1 clove garlic, grated
  • 3 tablespoons cilantro
  • 1 teaspoon chili pepper
  • 1 tablespoon tequila (optional)

Combine all butter ingredients in a food processor to combine. 

4 ears of corn

olive oil spray or oil to coat the corn

2 limes

1/2 cup of cotija or feta cheese

1 teaspoon of cayenne better or paprika

salt and pepper to taste 

Spray or brush the corn lightly with oil, and grill on a hot grill, turning a few times, for about 5 – 8 minutes until nicelly charred. Spread butter of the hot corn, season with salt and sprinkle with chili pepper. Squeeze on lime juice and great a nice mount of cheese on the top.
 
Smile say cheese and although this is cheeeesy there is nothing cheesy about it.
