HALLOOOOOUMI with ROASTED GRAPES

Haloumi, love it or hate it but it is amusing. To me. And humor in food is very important. Haloumi is the “grilling” cheese. you can grill it, or saute it, and it gets nice and crispy on the outside without melting. It is similar to a very, super dense feta cheese, it’s super flipping salty, so i prefer to serve it with something sweet, rahter than doing olives, capers, tomatoes and herbs.
 
serves 4 
Ingredients

1 8 oz package haloumi, sliced and soaked in water for 30 minutes to remove excess salt

3 tablespoons olive oil – or olive oil spray 

Juice from 1 lemon

1 clove garlic, grated 

Fresh or dried herbs, oregano, mint, basil 

4 cups grapes

Instructions
  1. Spray your grapes with olive oil spray. Season with salt and pepper. Toss into a 400 degree oven and roast for about 20 – 30 minutes. Just until they are starting to burst.
  2. But before they turn into raisins. Yummy.
  3. Drain your haloumi and pat dry on paper towels.
  4. In a hot skillet, saute the haloumi in some oil until just brown and crispy. Flip and do the other side. Or go ahead, it’s the “grilling” cheese, throw it on the BBQ.  Either way, try to eat it asap after cooking, as the texture becomes more chewy, after it cools down.
