HONEY MUSTARD BABY POTATOES
Honey mustard is a great last minute condiment to anything.
Delish with potatoes, gravlax or smoked salmon. You can make a great vegetable dipping sauce as is or by adding some mayoanise to it, which of course would be honey mustard aioli. Add lots of herbs, garlic and salt finish off the dip. You can also make this dip by adding lemon juice and oil to it. So many ways and interpetation of the same dish. You can use whole grain mustard (my fav) or regular dijon mustard, or horseradish mustard, your choice. And obviously you can always add HOT SAUCE!
ingredients
serves 4
4 cups baby potatoes
3 tablespoons oil to saute
Salt to taste
3 tablespoons fresh herbs, chopped
First we cooked our baby potatoes in salted water, skin on of course, until just soft.
We drained them and then we cooked them in a little oil until browned.
add chopped herbs and grated garlic too, and lots of salt.
Honey mustard…..ok, here we go – this is an EYE it measuring
honey (more) 60% + mustard (less) 30 %
variations: add chopped dill, garlic and a squeeze of lemon and oil.
Crudite vegetable dip
honey + whole grain mustard + a little mayo = great veggie dipping sauce
