JERUSALEM ARTICHOKE SALAD with olives and mustard

Jerusamel also known as sun chokes or earth apples. The tubers are grown underground and look like ginger, but taste like a marraige between artichokes and apples. You can cook them, roasted is delicious  or eat them raw, obviously my favorite way is to eat them raw.

And to be twinning it for the wining it salad we will add ginger to our dressing.

 
Ingredients
  • 4 Jerusalem artichokes
  • 1/2 cup green olives, pitted, sliced 
  • Lettuce of your choice, or mustard greens
  • 1/4 cup chopped parsley
  • 2 tablespoons whole grain mustard
  • 2 tablespoons Dijon mustard
  • Loads of lemon juice, at least 1 lemon
  • 1/4 cup olive oil
  • 1 tablespoon grated ginger
  • Salt and pepper
Instructions
  1. Whisk together dressing ingredients.
  2. Then peel and thinly slice (best to use a v slicer or mandolin) the Jerusalem artichokes into the dressing.
  3. Toss in the olives, and the lettuce.
  4. Ready to serve.
