LETTUCE HAVE SHRIMP TACOS

Taco Monday, Taco Tuesday, Taco Wednesdasy, Taco everyday, am I right?
Alright, tacos we will make. Soft taco, crispy taco, lettuce taco = balanced diet, healthy happy diet.
You can make it soy style or salsa style, both styles are very stylish. 
 
serves 4 
  • 1 pound Shrimp, chopped (or salmon, or chicken, or beef)
  • 1/2 cup chicken sausages, casing removed (or chorizo, or bacon)
  • 2 cups shredded vegetables, such as, carrot, cucumber, radish, cabbage
  • 8  each ettuce leaves (or corn tortillas) to wrap (2 per person) 
  • oil to cook 
  • soy style “salsa” dressing:
  • 4 tablespoons rice vinegar
  • 3 tablespoons soy sauce
  • (because when we do a soy rice vinegar mix, we always want, MORE vinegar than soy)
  • squeeze of agave
  • juice from one lime
  • 2 inch lemongrass stalk, sliced fine
  • 1 grated garlic clove, and some grated ginger
  • OR – salsa style – any salsa of your choice, and or guacamole 
Instructions
In a medium skillet cook the proteins selected (shrimp, salmon, chicken or beef) witt a few tablespoons oil, sautee over high heat in batches to not crowd your skillet, until just cooked through, about 5 minutes, pending the size of your dice. Transfer to a bowl. Cook the chicken sausage, bacon or chorizo if using next, stirring frequently until cooked through, about 3 minutes. Add to the shrimp bowl.
 
To make the soy style salsa dressing, combine all ingredients in a small bowl. 
 
Make a taco party with all the fixings, choose soy style or salsa style or a selection of both styles, and ready set smile.
