MARY MARY ROSEMARY PUDDING

Mary  mary quite contrary, how does rosemary grow?

Thanks for asking, very easily!  Like growing arugula, spicy, bitter, pungent, flavors, the critters of your garden do not like and so bunnies gophers and pesky pest will pass on right by.

All you need is sun, soil and some water and you got rosemary growing going. 

I am a “mix and pour” kind of baker…..and even better if there is no flour involved which is really messy.
 
serves 4 
  • 1 cup sugar
  • brioche bread, sliced, crust removed, buttered on one side
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 3 eggs, and 2 egg yolks
  • 3 cups half and half
  • 1 spring rosemary 
Instructions
  1. First melt your sugar in a heavy bottom pan. STOP. Do not stir it. Let it be. You can swirl the pan a little, but don’t put a fork in there. Wait for it. wait. When it turns into a nice and brown caramel, pour into your oven proof container. Sprinkle with sea salt. 
  2. Infuse your half and half with the rosemary by gently simmering both in a small pot for five minutes. Be careful as too much rosemary flavor will overwhelm you. We are not making candles, although we could, but that is for another day. You could also skip this step and just put some sprigs here and there. 
  3. Place the bread on top of the caramel. In a medium bowl whisk together brown sugar, vanilla,eggs and rosemary infused half and half and pour over the bread. Cover with foil and bake in a water bath for 45 minutes in a 375 degree oven. Or until? Yes, or until done. We are not gonna eat it until it is done.
