PEACE PLEASE – cauli – FLOWER POWER

Please, peas, peace, yes I will take all three.

And what is better than a vegetable with “flower” in it’s name, and it’s a nutrious power house, so FLOWER POWER and PEACE I mean peas, is a winning combination. Adding cooked quinoa, farro or lentils to a vegetable dish is always a great way to combine your starch with your vegetable for a super power flower meal. You can also use romanesco for a green and green version of this dish. 

Ingredients
  • head cauliflower, separated into small florets
  • 1 clove of garlic, grated
  • olive oil, s+p
  • pumpkin seed pesto (or regular pesto) optional
  • 1 cup frozen peas, green beans, or asparagus
  • juice from one lemon  
Instructions
 
    • Toss the cauliflower with a little oil and spread on a sheet pan and seaon with salt. 
  1. Roast the cauliflower in a 400 degree oven for 20 – 30 minutes until soft and browned in spots. Remove sheet pan from oven and toss in the peas, and the garlic please. The heat from the pan and the roasted caulfilower should be enough to heat up the peas, or you can return to the oven for two more minutes. Do not over cook once the peas have been added or they will turn brown and sad. Toss in some pesto, a squeeze of lemon juice.
