ROASTED CAULIFLOWER
What’s better than simply roasted cauliflower?
Ingredients
- head cauliflower, separated into small florets
- 1 clove of garlic, sliced thin or grated
- olive oil, s+p
- pumpkin seed pesto (or regular pesto) optional
- 1 cup frozen peas, optional
- 1 lemon – optional
- Toss the cauliflower into some olive oil, and season with garlic, s+p.
Instructions
- Roast in a 400 degree oven for 20 – 30 minutes until soft and browned in spots. Serve as is with a squeeze of lemon or toss in some pesto and/or peas/ or green beans for extra flavor.
