ROASTED CAULIFLOWER

What’s better than simply roasted cauliflower?
Ingredients
  • head cauliflower, separated into small florets
  • 1 clove of garlic, sliced thin or grated
  • olive oil, s+p
  • pumpkin seed pesto (or regular pesto) optional
  • 1 cup frozen peas, optional
  • 1 lemon – optional
  • Toss the cauliflower into some olive oil, and season with garlic, s+p.
Instructions
  1. Roast in a 400 degree oven for 20 – 30 minutes until soft and browned in spots. Serve as is with a squeeze of lemon or toss in some pesto and/or peas/ or green beans for extra flavor.
