RED AND GREEN CABBAGE SLAW with PAPAYA
Fish taco is our number one selling entree, you know, back in the world we had restaurants that were open. They came with cabbage, and now we have mountains of cabbage in the walk in. Actual cabbage mountains.
Do they want cabbage, do they eat cabbage? Cabbage is nutritious and delicious and hope those unseen heroes of ours agree. and OF COURSE we pumped it up with quinoa, and white beans.
This is a variation of Mama Tran chicken salad.
RED AND GREEN CABBAGE SLAW with PAPAYA
Servings: 4 people
Ingredients
Red cabbage ingredients:
- 1 cup red cabbage, sliced fine
- ½ cup julienne red bell peppers
- ½ cup julienne raw carrots
- ½ cup cooked quinoa
Green cabbage ingredients:
- 1 cup green cabbage, sliced fine
- ½ cup green papaya, sliced thin (or ripe yellow is fine)
- ½ cup romaine lettuce, sliced thin
- ½ - ¼ cup white beans, cooked, homemade or purchased, drained
- 1 cup cooked shredded chicken or cubed tofu
- ½ cup mama tran chicken salad dressing
Instructions
- We divided ours with green on one side and red on the other side, but however you want to to it. Toss it all together add the dressing, and agree or disagree that cabbage is delish.
