TEQUILA LIME CHICKEN

I don’t drink alcohol….but.….tequila chicken, tequila cream sauce, tequila salsa, or ceviche, isn’t drinking right? A girl, a lady, a mama has got to eat right, right?

Serves 4 

4 bone less skinless chicken breast

Zest and juice of three limes

1 small shot of tequila 

2 cloves garlic, grated

3 tablespoons olive oil

1 tablespoon cilantro, chopped 

dash of red chili pepper flakes

Instructions
  1. Mix all dressing ingredients together in a bowl. Pour 1/3 of the mixture over the chicken and allow to marinate for 2 hrs. Season well with salt and pepper. Grill on each side until done. Pour remaining dressing over the chicken and finish of with a dash of sea salt. CHEERS, SKAL, SALUTI, KANPAI, we are ready to…..eat.
  2. Servvings options:black bean peach salad: 1 large peach, 1 cup back beans, 1 jalopeno or serrano chilli pepper, two tablespoons cilantro, 1 tablespoon red onion, juice from one lime, salt to taste. Chop all ingredients, and combine, season to taste with salt.
