Mama Tran Chicken Salad

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked red quinoa
  • 1 cup finely shredded cabbage
  • 1 cup finely sliced, cucumber, carrot, and cilantro
  • 2 tablespoons black sesame seeds

Dressing:

  • 2 limes, juiced
  • 2 cloves garlic, grated
  • 5 tablespoons maple syrup
  • 6 tablespoons fish sauce
  • 1 tablespoon sriracha
  • ½ cup water
  • ¼ cup canola oil

Instructions

  • Combine chicken salad ingredients in a bowl.
  • Whisk together the dressing ingredients, and toss with the salad.
